The recipe for black nougat is made from lavender honey, sugar, nuts or dried fruit, in this case almonds from Provence, and unleavened bread. This ancient recipe has its origins in the Mediterranean.
It is said that this nougat is black because the master confectioners do not incorporate egg whites in the preparation. Thus, the mixture of ingredients gives the paste its dark colour and a caramelised and crunchy texture.
